Redefining Dining, Wales and beyond

More venues. Better reviews. One guest list.

Redefining Dining runs 11 venues, including The Welsh House and Cattle & Co. With bookings, guest data, reviews and email on Stampede, its Google rating rose from 3.89 to 4.44 stars in six months while its reviews grew more than five times over, and its contact database doubled in a year.

The short version

  • Redefining Dining is a hospitality group with 11 trading venues, including The Welsh House, Cattle & Co and The Coal House.
  • Redefining Dining’s Google rating rose from 3.89 to 4.44 stars, a 14% improvement, comparing April to September 2026 with the six months before, while its Google reviews grew more than five times over.
  • Redefining Dining’s teams have replied to over 830 Google reviews through Stampede, typically within about three days.
  • Redefining Dining’s contact database doubled in a year, to over 87k contacts across the group, and marketing opt-ins over the summer tripled.
  • Guests who booked through a Redefining Dining email campaign and then dined had an average receipt value 2.6 times the group average.
  • At Cattle & Co Llanelli, Stampede works with Square, so a booking is already on the till when guests arrive and closes when the table closes.
The business

A group with more than one identity.

Redefining Dining has grown to 11 trading venues. Its portfolio includes The Welsh House, which celebrates Welsh food and hospitality, and Cattle & Co, known for its smokehouse dining.

“With the Welsh heritage of the restaurant, we try and get a feeling of cwtch, which is a hug. When people come into the restaurant, we want them to feel warm and hugged throughout their visit.”
Lowri Jones, Group Operations Manager, Redefining Dining Co

As Redefining Dining grows, so does the job of understanding its guests. Bookings, payments, reviews and marketing data once sat in different systems or with individual venues. The information was there, but it was hard to bring together or use across the business.

Redefining Dining wanted a clearer view of who was visiting, which venues they chose, what they thought of their experience and what might bring them back. Stampede now brings bookings, guest data, reviews and email marketing into one place, giving venue teams and the central team a shared view of the guest relationship.

“Stampede has given us a much clearer picture of our guests and the ability to do something with that information. Our teams can see bookings and feedback across the group, respond to reviews and understand what guests are telling us. That matters more as we grow. We’re opening in new places, but we still want every team to know its guests and keep improving their experience.”

Momentum

Better on every count.

In the six months to September 2026, Redefining Dining’s Google rating rose from 3.89 to 4.44 stars, a 14% improvement, while the number of reviews grew more than five times over. Across the group, the contact database doubled in a year, and the number of guests opting in to marketing over the summer tripled.

Most groups would be pleased with any one of those. Redefining Dining did all four at once, while opening new venues.

Every comparison on the right is the latest period against the one before it. The rating went up while the reviews multiplied, and the guest list doubled while opt-ins tripled.

Rating and reviews: Apr to Sep 2026 against Oct 2025 to Mar 2026, Welsh venues. Contacts: Oct 2025 to Oct 2026. Opt-ins: Jun to Sep, 2026 against 2025.

Reviews

A better rating on five times the reviews.

Guest reviews are easier to see and respond to across the Redefining Dining venues using Stampede. Between April and September 2026 the Google rating averaged 4.44 stars, up from 3.89 in the six months before. Over the same period the number of Google reviews grew from over 260 to nearly 1,400.

A rising rating on rising volume is the hard part, because more reviews usually make a high rating harder to hold. Comparing summer 2026 with summer 2025 the rating held at 4.4 stars while the number of reviews went from under 70 to over 1,100.

Redefining Dining’s teams have replied to over 830 Google reviews through Stampede, typically within about three days. That visibility helps the group see what guests are enjoying and where an experience needs attention, spot themes across venues, and give each team the chance to respond to its own guests.

Bookings, reviews and email responses all land on the same guest profile, so the central team and each venue are looking at the same guest relationship.

Three sources, one record.

On the floor

Ready before the guest sits down.

Archie has worked at Cattle & Co Llanelli for six years and is its Assistant Manager. Cattle & Co is a smokehouse, and a lot of its trade is families and birthday parties. The venue had used other booking systems before Stampede.

“This one honestly has been the best. It is so easy to book people in.”
Archie, Assistant Manager, Cattle & Co Llanelli

Stampede works with Square at Cattle & Co, so a booking is already on the till when the guests arrive, and when the table closes on the till, the booking closes with it. The team can see at a glance who is in and who is still to come.

“If you create a booking it’s already on the till for you, so you don’t have to reopen tables. And when the table closes, it closes the note in there. So it’s a very easy transaction to figure out who’s here and who’s not.”
Archie, Assistant Manager, Cattle & Co Llanelli

Guests can mark a booking as a birthday when they book, so the Cattle & Co Llanelli team knows before the table arrives and has a personalised birthday card ready for it.

“When they book they have the birthday party option. If it is a birthday party, it’s always a happy birthday. We have birthday cards here which we give out to the table, and we personalise them, so it is for that table specifically.”

The guest list

A database that doubled in a year.

Across the group, Redefining Dining’s contact database doubled between October 2025 and October 2026, from over 43k to over 87k contacts. Over the summer of 2026 the group added 116% more new contacts than over the summer of 2025, and the number of guests opting in to marketing between June and September tripled, from over 5.2k to over 16.4k.

Redefining Dining has sent over 110 email campaigns in 2026, covering menus, events, offers and other reasons to visit. Those campaigns are contributing to bookings too. Guests who booked through an email campaign and then dined had an average receipt value 2.6 times the overall average across the group.

“Having our guest data in one place makes a real difference to how we market our brands. We can build our audience across the group, see which campaigns lead to bookings and give guests a reason to come back. Each brand has its own identity, so it’s useful to have that shared view while still speaking to guests in a way that feels right for the place they visited.”

Next chapter

A new steakhouse in Gorseinon.

Redefining Dining is still opening venues. In October 2026 it opened The Coal House in Gorseinon, a destination steak restaurant in the former Seagers.

“We’ve taken over an old restaurant that was there, which is a steak house. So we wanted to keep the grassroots of what it was before.”
Lowri Jones, Group Operations Manager, Redefining Dining Co

Every new venue brings new teams and local audiences. Redefining Dining can take what it has learned across its venues into each opening: a growing guest database, a clearer view of feedback and a direct way to keep in touch.

In numbers

A better rating, five times the reviews and twice the guest list. Imagine what yours could do.
